I want to keep this blog up, because it's a lot of fun. But I've lost some motivation with cooking. I rarely bake anymore, but I assure you I'll be posting here sometimes. One of my favorite meals I've been having is roasted chickpeas with tomato sauce and spinach with garlic. It's super yummy :)

Back from the dead...
Sorry I haven't been updating. I've mostly been keeping up with my tumblr, which is thatgreekvegan.tumblr.com. But the url is changing constantly, haha. It's somewhat of a food blog, but to be honest its more of an 'everything' blog. Some of my photography is on it, as well as other random posts. It's not a replacement for this blog, by any means.

Chili, cats, and cookies
Sorry it's been a while since the last post. :) I made this amazing chili with homemade seitan from Vegan with a Vengeance a little while ago, plus corn muffins from The Kind Diet with peanut butter. Yum.
And made these cookies (my own recipe!) It had coconut, homemade almond/walnut maple butter, and they were really yummy. I wrote down the recipe, somewhere, but I can't find it :( I'll let you know-they were super good!!

A New Breakfast
Oat bran has been all over the blogosphere...especially on Heather Eats Almond Butter, so I decided to get some yesterday. I cooked about 1/3 cup with some nutritional yeast, (it was good!) a teaspoon of peanut butter, and toppings were unsweetened coconut and homemade carob walnut granola. Yum!! Like my Tinker Bell spoon?
I have this week off school, so I can actually find some time to blog! I'll just be hanging out with friends, doing an online class, and probably baking...more than usual. :) Speaking of which, I made these Chocolate Thumbprint cookies last weekend for my soccer team. They were so good!

Shortbread cookies
Hello blog world...I think I finally figured out this new way to post stuff. I 'upgraded' my dashboard or something, so now posting and uploading pictures is different. Easier, if I may say so myself.
Happy late valentines day! These shortbread cookies from The Kind Diet were made in honor of the holiday. I enjoyed a lovely weekend with my family at my grandma's house, also celebrating my niece's 5th birthday.
I love this picture!!
Vegan chocolate truffles...
Jiffy mix company!! Went on a photography walk.
I have to go and do some work, shower, clean up...I'll blog soon!

Post coming soon...
I have a lot to blog about-but I have been super sick these past few days with a really bad cold. I've been resting a lot, but I promise I'll post soon :)
