'Tis complete.

Peach cherry cobbler. A winner.







Same recipe as the peach cobbler, only added like 1/3 cup pitted cherries (a guess), and I made a 1/2 recipe because wer'e going away. But I'll give a final recipe. For my sake. If your planning on trying one of the cobblers from the last 3 posts, try this one. Seriousley.
Filling:
8 sliced peeled peaches
About 2 handfuls cherries, pitted and chopped in 1/2
2 T cornstarch
big pinch cinnamon
3/4 cup brown sugar
2 tsp vanilla
Oat topping:
2 1/4 cup rolled oats
3/4 cup instant oats
2 cups mixed flours, like brown rice, spelt, and all purpose
1/4 tsp salt
1/4 tsp cinnamon
3/4 cup canola/veg. oil
3/4 cup brown rice syrup
1/4 cup maple syrup (I dont have any now, so I blended 1/4 cup brown sugar with a bit of water to form a syrup)
Scant 1 cup slivered, toasted almonds
Preheat oven to 350'F. Grease a 9X13' dish.
Dry roast the oats, flours, cinnamon, and salt over medium/low heat in a large skillet for 5 minutes, or until fragrant. Heat the oil and syrups in a seperate saucepan, and pour that over the dry mixture. Mix well in a bowl, then stir in the almonds.
Combine all the ingredients for the filling until the cornstarch and brown sugar is dissolved. Pour into the pan. Top with the granola topping. Bake for 30 minutes, take out, see how done it is, then bake another 15-25 minutes, depending on how ready it is. I swear this is the last cobbler recipe you'll see in a while.
