A New Breakfast


 Oat bran has been all over the blogosphere...especially on Heather Eats Almond Butter, so I decided to get some yesterday. I cooked about 1/3 cup with some nutritional yeast, (it was good!) a teaspoon of peanut butter, and toppings were unsweetened coconut and homemade carob walnut granola. Yum!! Like my Tinker Bell spoon?

I have this week off school, so I can actually find some time to blog! I'll just be hanging out with friends, doing an online class, and probably baking...more than usual. :) Speaking of which, I made these Chocolate Thumbprint cookies last weekend for my soccer team. They were so good!

Hmmph. Sorry for the lack of posts! MY camera cord is temporarily...missing. I'll find it though, with a large amount of information you probably don't care about. A lot of pictures though. To come, I have:

Memorial Day comes to an end

Memorial day weekend was filled with soccer, running, cooking, eating, and more soccer! We had a tournament which we won the first two games in on Saturday. They were both pretty close games, but our team pulled it off.
I came home Saturday night, slept like a ROCK, then went to another game at 7:30 AM!! I didn't quite wake up for a while... Unfortunatley, we lost that game by one, but it was close and we definetly should have beat them. Pout.
We had some friends come over to our lakehouse, and there was cooking involved! I made a carrot chickpea salad from Food and Wine Magazine, pesto over roasted veggies, and a dessert! My dad made shrimp scorpio, potaters, crabcakes, and salad. Dessert was Raspberry chocolate blondies from Vegan with a Vengeance! These were amazing and they were so doughy, maybe too doughy! I like desserts like that. But I served the guests them with a scoop of ice cream, raspberry sauce, and chocolate chips. It was a hit! I enjoyed mine like that, minus the ice cream. But the chocolate chips made up for it:)
Raspberry layer:
2 cups frozen raspberries
3 Tbsp cornstarch
1/4 cup cold water
1/3 cup sugar
Blondie layer:
3 3/4 cups all purpose flour
1 1/4 tsp baking soda
1/2 tsp salt
1 6 0z container of soy yogurt (plain or vanilla)
1/4 cup rice milk
1/2 cup plus 2 T canola oil
2 cups sugar
1 T vanilla extract
1 cup chocolate chips
Preheat oven to 350'F. Lightly grease a 9x13 inch baking pan.
For the raspberry layer, combine all the ingredients in a saucepan and stir until the cornstarch is dissolved. Bring to a boil, then lower to a simmer for 5 minutes, stirring often. Remove from heat.
For the blondie layer, sift the flour, baking soda, and salt in a medium sized bowl. In a large bowl, combine the soy yogurt, rice milk, oil, sugar, and vanilla. In batches, pour the dry ingredients into the wet to form a dough. Set aside 1 cup of the dough and spread the rest in the prepared baking pan. Spread the raspberry layer over it (or 1 cup raspberry preserves). Sprinkle 1/2 the chocolate chips over the raspberry layer. Drop the remaining dough over the chips and raspberries, sprinkle the rest of the chocolate chips over that. Bake for 35 minutes. Let cool completely before serving.

After today, filled with boating, swimming, tubing, and getting eaten alive by mosquitos at my cottage, we came home! I was huuungry by the time we came back, so I threw together something. The lil' bit of mochi in the fridge was dying to be used up so I made...

MOCHI WAFFLES!!

Yes, mochi waffles. It's a "recipe" in The Kind Diet, but all you have to do is put a chunk of mochi in a preheated waffle iron and BOOM. Top with brown rice syrup, walnuts, applesauce, jam, nut butter, you get the picture. (not all together!) I threw together a "sauce" made of homemade applesauce, maple syrup, water, and 1/2 tsp of almond butter. I threw some blackberries on too. The sauce was OK, I should have done something simpler. But it was still good!

I paired this with a mountain of carrot stix that my dad cut up for me, and some raw broccoli with sriracha chili sauce for dipping. Spiiicy!

Pictures went bye-bye.

Yeah. It's sad.
But the good news is that we happen to have a digital camera in the house that I MIGHT be able to use. Crossing my fingers...
So heres a boring post, I guess. You'll just have to use your imagination for the pictures.
Well yesterday I wanted pancakes...Let me give you a peice of advice. Don't take a waffle recipe and try to make it into a pancake recipe. And don't listen to Isa's heating tips in the Vegan with a Vengeance cookbook. Medium high? Pshh. It made the outside crispy (charred) and the inside doughy. Next time I will A. Use a pancake recipe. B. use a lower heat. I think that should work. BUt they did have great flavor-banana oat raisin (waffle) into pancakes. I always try to learn from my mistakes though.
After my AWESOME guitar lesson and soccer game (which we won! YAY!) my dad and I had some lunch together. Leftover lentil soup from The Kind life, (very small cup:( )some chips with guacamole, and fresh melon cubes. Held me till dinner!
I did a lot of gardening yesterday. Weeding the front garden, mostly. But some cutting of branches, raking, and disposing of dead leaves. Wish I could show you a picture!
My dad, friend, and I went out to our family lakehouse last night. We stopped at Godaiko for sushi and it was DELISH! I got the cucumber vegetarian rolls, (gouged in soy sauce, of course) and some avocado slices from my dad's plate.
After another win in a soccer game (3-4!) my dad stopped at best buy to have the Geek Squad at Best Buy look at his newly purchased laptop. It's a pretty cappuchino color. Something is wrong with his keypad, I feel bad:(
We had a great lunch together, some leftovers from a baby shower that he had on Friday for a coworker. Quinoa salad with peapods, apricots, and apples, Pita chips and carrots with guacamole, a cube of the super amazing delicious addicting bread I made, and a few more melon cubes. Still not that hungry for dinner, but I'll have some fruit n' veggies, or some bread. NOTE TO SELF: Late lunches (3 o'clock) result in a hunger absense later on. Oh well.
Went for a run for 2.5 miles through the park by my house. It was hard because I was cramping a little bit on my sides, so I walked 30%40% of the run. It's better than nothing!
Intense singing week for me. I have a rehearsal tomorrow to work on my solo for my choir concert, and the concert (x2) on Tuesday! Also auditions for a show on Thursday. Hello tea and throat losenges! Weeeeeeeeeeeeee!
I hope to have a camera soon, I know I keep apologizing, and I know it's annoying, but SORRY ABOUT THE PICTURES again. Okay, hope to have a more colorful blog next time.

Oops!

Sorry this is sooo late! My internet wasn't working for like, 2 days. Oh well, I'll start back up again today-I am determined not to give up on this blog. So heres today's story.


When I woke up, I wasn't the least bit hungry:( But I knew I'd be starving if I didn't have something. So I had a green apple, and a fig. (or 2...) It was fine, I don't know what was up but this was fine till lunch.

I enjoyed a walk home, it was a bit chilly but started raining a lot on the last 5-10 minutes. I used my zebra stripe lunchbox to cover my head! Mwahaha.......

I had an early dinner at like 5:30, right before soccer practice. I made Sweet Potato lentil stew, the recipe is one of my earliest blog posts. I served it over brown rice, and it's so filling and delisssssssh! I reccomend it 100% and it makes your house smell freaking amazing.

Well hopefully I'll have something more exciting than fruit and leftovers tomorrow! Maybe oatmeal? But I may be going out for dinner. Ok, well I'll blog tomorrow!
